Using a generator to create high-vacuum suction, the sap from maples is pulled from the trees, fed through plastic lines and collected in a bulk tank. There are about 1,200 taps on maple trees, which have to be maintained each year, as well as after a bad storm. GINNA YOUNG, COURIER SENTINEL
