June Dairy Recipe Contest The Clark County Dairy Promotion Committee sponsored its annual June Dairy Month Recipe Contest on June 25 beginning at 7:30 p.m. at the Loyal City Hall. The 2025 theme was Mexican foods. All contestants received a dairy promotion gift. The top 10 winners pictured here took home over $300 in prizes: (back row, l-r) Irma Johnson, Jacob Fischer, Rachel McBride, Alissa LePage, Junitta Nikolai, (front row) Bunny Dux, Jean Koski, Betty Durham, Reita Gelander, and Betty Loos. Participants needed to include at least two generous portions of dairy products. Entries had to be made from scratch and include enough for three judges and sharing/taste testing (8-inch x 8-inch or larger casserole dish or a 2-quart or more cooker). Add vanilla, stir as it starts to cook and dissolve. Stir in cream and salt, let it bubble up, stirring until thick (about 5 minutes). Remove from heat and let cool. In a small bowl mix together the granulated sugar and cinnamon and set aside. In a medium bowl combine cream cheese and 2 tablespoons brown sugar. Mix thoroughly. Spread one quarter of the cream cheese mixture on a tortilla, add 1/2 cup shredded apples, and sprinkle on some of the cinnamon sugar and 1 tablespoon chopped pecans. Heat large skillet over medium heat and add 1 teaspoon butter. Lay the filled tortilla in the skillet then top with a second tortilla; cook for about 2 minutes. Flip the quesadilla and cook on the other side for another 2 minutes. Remove from pan and let set. Cut into wedges and sprinkle on more cinnamon sugar. Put caramel sauce in a small pitcher and pour in a swirl over the top. Assemble the remaining three quesadillas and enjoy.
